No need to reinstall the carbs to see if they are going to leak, turn them upside down and check with a Mitivac to see if they hold pressure. If one fails to hold 2 to 3 lbs of constant pressure, it's going to leak fuel. I check them before putting the bowls back on. A leak can easily be found...
Doubt you hurt the engine with the starter.
If an o ring on a seat is cracked or the needle valve is bad, tapping on the carb will do nothing. I might try gently tapping on one to get me home, but no reason to otherwise. They're going to have to come apart anyway, it's really not hard.
Sounds like it's time to rebuild the carbs.
If a lot of gas is getting above the piston, that would explain the no crank issue because liquids do not compress.
Might want to check the oil too because it's probably diluted with gasoline.

If you want the grips controlled by the ignition, you really should use an existing ignition powered circuit to energize the coil on a relay and run the power circuit for the grips through that relay.
