My 01 will typically go 160 to 175 in the city traffic before the light comes on. I can squeeze almost 200 miles out of a tank on the freeway if I watch my speed. If I have fun in turns, around 120 is all I can hope fog. I have a Micron slip on and rejected carbs.
You can find out if you are running rich or lean by looking at your spark plugs.

I think that the forks are pretty flexible. My last bike was salvaged when I got it and the front wheel was actually not straight. I just loosened the all the bolts (bike suspended using the frame) and tightened them back up and the bike rode perfectly straight.

We are heading up from Sac next Wednesday at noon, taking 5 to 36 to 3, than heading north on 3 to Weaverville. Thursday and Friday we are riding couple of loops. We'll probably be on 36 Friday.
