Hey all, 05 fz1 just installed new pipe, air filter pods and rejetted. Bike rips no issues with how it runs. The cooling fan is not coming on, at all. What should i be checking?

Pulled the plug from the thermostatic switch and jumped it there. Fan works good. I see when i jump it that the high temp light goes on. Does that mean the fan only comes on when its in high temp? Whats that temperature i wonder. Thinking about getting a male side plug and installing a switch so i can manually turn on the fan for in town riding.

No, the fans come on before the high temperature warning light. Shorting it out is the equivalent of the temperature variable resistor being at a warning level temperature. The fans come on at a higher resistance value than that.

The temperature of the water. Most likely the sensor that you unplugged from has gone bad. Measure the resistance with the bike warmed up. I won't be surprised if it's open circuit or a real high value.
